Orlando Cafe to debut with ‘raw’ cuisine
Central Florida is about to get its first big taste of raw food. Plans are in the works for a Winter Park restaurant called Cafe 118, which will specialize in “raw” cuisine. For those unfamiliar with the concept, a “raw foods” restaurant typically serves dishes prepared using only uncooked vegetables, fruits, nuts and other non-animal-based ingredients. In other words, don’t count on getting a raw steak. Nothing is pasteurized or heated above 118 degrees, the temperature at which nutrients start to be lost, according to raw-food enthusiasts. Matthew Kenney, who is behind the Winter Park restaurant and was the co-creator of a popular New York City raw restaurant called Pure Food and Wine, said he expects his eatery to open sometime in early July.
